About Malai Gilori

In Banaras a gilori is a paan leaf folded into a neat triangle. Malai Gilori borrows that shape, but the leaf is a sheet of malai, so the sweet looks like paan and tastes of cream, dry fruit and rose.

To make it, full-cream milk is heated slowly in a wide kadai, and the layer of malai that forms on top is lifted off in thin sheets. Each sheet is filled with khoya sweetened and mixed with chopped dry fruits, cardamom and gulkand, folded into a triangle and topped with silver vark.

Because it is made from fresh cream, Malai Gilori is best eaten soon after you buy it. If you want to carry a box on a journey, message us on WhatsApp first and we will tell you how to pack it and how long it will keep.
